Celebrating the French National Day – 14 July

“A Caudalie is the equivalent of each second that a wine’s flavour remains on the palate, and is therefore supposed to measure the quality of the wine. With this in mind, Erick set out to make a wine of the highest possible quality, starting from the vineyard, where he is fully biodynamic, to the cellar, where he uses oak barrels to encourage the formation of complex flavour compounds”.

The Rosé is incredibly subtle when young, offering scents of cherry blossoms, ripe apricots and hazelnuts. Incredible presence on the palate, combining depth of fruit and flavour with a light, satin-like texture. Very, very long finish (i.e. lots of Caudalies!)

NV Champagne Brut Blanc de Blancs Grand Cru Cuvée des Caudalies
Erick’s top cuvée from his old Chardonnay vines, this is aged exclusively in oak barrels, some of which is new. At this stage there are about 15 different vintages in the blend, starting with the 1995, resulting in a multi-layered, very complex and utterly delicious wine. It works very well with any rich fish, either cutting through the fat (as with o-toro), cleansing the mouth of gelatin (as with turbot), or matching the texture (as with eels). We think it’s best about 3-5 years after disgorgement (the dates are on the back label), or with a short decant to allow the wine to fill out and come together.

On 27 & 28 June, KOT Selections will host vintage wine and cheese tasting sessions at their tasting room on 64 Neil Road. Guests can expect a range of wines from various French regions and at different stages of maturity, including a 1999, to illustrate why we age wine and how they work with cheese.

The tasting flights include 2 tasting portions of wines and cheese, starting at $18. Guests can also choose the Luxe Tour and try 10 wines paired with 5 different types of cheese, including young and aged examples of the same cheese.

Prêt à Prendre: Loire 2005

loire-2005We’re delighted to release a quartet of 2005s from the Loire as part of our ongoing Prêt à Prendre series from four delightful growers. The 2005 vintage was one of the most magical in recent memory along the Loire, with even ripening, small berries, no excess heat (unlike 2003, for example), leading to concentrated, well-structured and finely-balanced wines.

In Muscadet, we have the «Le “L” d’Or»  from Domaine Luneau-Papin, with its exquisite mix of stone fruit, lees and mineral flavours, all melded together with a persistent yet gentle acidity. The Muscadet Réserve from Michel Brégeon is altogether different, its full body due to the long aging on lees (60 months before bottling!) and impenetrable, dark gabbro bedrock. Both are drinking very nicely now.

We also have a series of contrasts with our two Chenin Blancs – a dry, powerful and mature Savennières «Les Genêts» from Damien Laureau, having shed some of the oak influence and now showing the schist/flint nature of the terroir, along with the honey notes of older Chenin Blanc. Similarly, the sweet Vouvray Cuvée Botrytis from François Pinon is showing honey and fresh flowers, with a touch of tea leaves from the botrytis. Both wines will age further, but they are at a very nice stage now, especially for pairing with food.
