NV Champagne Brut Rosé Grand Cru Cuvée des Caudalies
“A Caudalie is the equivalent of each second that a wine’s flavour remains on the palate, and is therefore supposed to measure the quality of the wine. With this in mind, Erick set out to make a wine of the highest possible quality, starting from the vineyard, where he is fully biodynamic, to the cellar, where he uses oak barrels to encourage the formation of complex flavour compounds”.
The Rosé is incredibly subtle when young, offering scents of cherry blossoms, ripe apricots and hazelnuts. Incredible presence on the palate, combining depth of fruit and flavour with a light, satin-like texture. Very, very long finish (i.e. lots of Caudalies!)
NV Champagne Brut Blanc de Blancs Grand Cru Cuvée des Caudalies
Erick’s top cuvée from his old Chardonnay vines, this is aged exclusively in oak barrels, some of which is new. At this stage there are about 15 different vintages in the blend, starting with the 1995, resulting in a multi-layered, very complex and utterly delicious wine. It works very well with any rich fish, either cutting through the fat (as with o-toro), cleansing the mouth of gelatin (as with turbot), or matching the texture (as with eels). We think it’s best about 3-5 years after disgorgement (the dates are on the back label), or with a short decant to allow the wine to fill out and come together.
